Chef Alex Y.J. Kim got started his culinary arts in 22 years ago here in Southern California and spent time in Sushi scene learning in addtion to traditional and modern fusion sushi but truly came into his own new styles and making his own variety of signature dishes during the time he spent in the Culinary arts. There are influence of Italian, Latin American, and Korean cuisine incorporated into his fusion dishes.

ROLLIN' Pollo a la Brasa & Roll was reestablished in June, 2016 and is about combines of fulfilling unique mixture of Latin American Firewood Rotisserie Chicken and Japanese Fusion Rolls. We want to provide our guests with a unique culinary experience. We want to ensure that the highest quality meat and fish are selected. We want to create unique mixture of Latin American and Japanese Fusion Rolls that incorporate the influence of cultural heritage.
